✨ Recipe:

Ingredients

4 large lumpia wrappers (or lettuce leaves for that extra lightness)

1 cup shredded carrots

1 cup shredded cabbage

1 cup of half a pad of grated coconut or jicama against the julienne-cut edge

½ cup green beans in permissible position

2 tbsp minced garlic

1 tbsp olive oil

Lettuce leaves for lining.

Peanut Sauce:

2 tbsp peanut paste 

1 tsp cornstarch diluted in a quarter cup of water

1 clove garlic, minced

1 tsp low-sodium soy sauce

½ cup water

Instructions:

1️⃣ Sauté garlic in olive oil, add all the vegetables, and let them cook lightly yet remain crunchy.

2️⃣ Put lettuce on the wrapper and fill it up with veggies, and tightly roll. 

 3. Preparation of the gravy: sauté garlic, add soy sauce, and then put peanut butter and cornstarch mixed with it. Stir until thick.

4️⃣ Pour sauce over the lumpia and top with crushed peanuts.
