Chocolate Peppermint Mousse Recipe
Ingredients:

1 ½ cups full-fat coconut cream that has been chilled overnight for firmness (the best)
1 cup dairy-free dark chocolate chips or a bar of non-dairy chocolate cut into small pieces
2 tsp pure maple syrup. Add more if you like to make it sweeter.
1 tsp pure vanilla extract
½–¾ tsp peppermint extract (adjust to taste since it is potent!)
pinch of sea salt
Optional Toppings:
Crushed Christmas candy canes, Vegan whipped cream, Mini chocolate pieces, fresh mint leaves, and shaved dark chocolate
Steps (with Maximum Detail):
Step 1: Preparation of the Coconut Cream
- A can of coconut milk should be kept in a fridge overnight
- Cold enough. Open the can with a knife and use a spoon to scoop up most of the thick cream that adheres.
- One and a half cups of coconut cream need to be removed from a can with a spoon and placed in the mixing bowl. Use a hand mixer to whip the cream just enough to make it completely smooth without mashing it further.
Note: Just as it was taken from the refrigerator, keep the cream very cold at all times, as you need it to whip to that much lighter, airier mousse texture.
Step 2: Melt the Chocolate.
- Place all of the dairy-free chocolate pieces in a heat-safe bowl. Leave it there for now.
- The melting and heating of chocolate using the double-boiler method. Put a little pot in boiling water using the heat, and then lower the flame until it simmers. By now, work the chocolate until the water reduces to a gentle simmer and the chocolate melts.
- The last and most important step is to cool down to room temperature. (That melted chocolate is as good as melted cream; therefore, cooling is important.)
Step 3: Combine the flavors, i.e.,
- Flip and stir the melted chocolate into the whipped coconut cream.
- Drizzle maple syrup on top, adding a touch of vanilla extract, peppermint extract, and salt, and fold in.
- Now gently fold with a spatula until fully mixed. That mousse should appear silky and well-blended. 4. Taste-adjust peppermint flavor and/or sweetness level as desired.
Step 4: Chill and Set
- Portion mousse into small cups, glasses, or jars.
- Cover and refrigerate for 2-3 hours or until the mousse is firmly set.
- Garnish before serving with holiday toppings.
